Healthy gluten free banana pancakes

By Sue Bedford (MSc Nutritional Therapy)

Fancy some easy to make, healthy gluten free banana pancakes for breakfast? Why not try these? Nutritionally great- packed full of fibre, potassium, protein and numerous vitamins and minerals from the eggs, banana and other fruit!

To make you will need:
2 bananas
2 eggs
4oz rolled oats (organic where possible)
1/2 teaspoon baking powder
Honey- to serve
Fresh fruit of your choice to sprinkle over.

Combine the oats, ripe bananas, eggs and baking powder in a blender and blend until smooth and thick. Cook spoonfuls of the batter (make according to the size you wish) in a non-stick frying pan until golden brown on both sides and cooked through. Serve with honey and fresh fruit and sprinkle with seeds(optional) (you could always add some greek yoghurt too!).
