Very Berry Healthy Bites

Fancy a lovely berry snack? Why not have a go at making these delicious bites this valentine week?

If you need a snack why not choose a healthy balanced one. The oats are a great slow release carbohydrate and fab for the gut, the berries and seeds provide some fertility friendly antioxidants, vitamins and minerals, and the nut butter provides some healthy monounsaturated fat and protein.

Ingredients (makes around 20 bites)

50g Raspberries

50g Strawberries

100g Oats

50g Peanut butter or cashew butter (nut butter of your choice)

30g Desiccated coconut (optional)

5g Chia seeds or small seeds of your choice

How to make:

Place all ingredients except for the coconut into a bowl and blend using a blender until sticky.

Make small balls from the dough and then roll them in the coconut (if you are using coconut).

Place into the fridge overnight and enjoy. Store in an airtight container for up to 3 days.
